I often used the Arial Black font in emails on Thunderbird, but it disappeared a few months ago after an update. It is still installed on my computer (and I tried reinstalling it), but it still doesn't appear in Thunderbird. Is there any way to add it back - or for Thunderbird to add it back in a future update?

Thunderbird uses unicode fonts. My guess is the one you mention is not a unicode version.
