Hi Firefox is trying to sync my account with an old email address - which I can no longer access and it keeps trying to send confirmation to the defunct email account. Is there a way to sync the account witht my current email without needing to confirm to the defunct account?

If you do not have access to the old email account then you will have to create a new Firefox Account with an email address that you can confirm.
