I've looked all over in Thunderbird 78.0.1

There isn't a Preferences option in the menu. And the Options menu doesn't give you anything about changing views.

I'm trying to get the three vertical panes, instead of the reading pane on the bottom. Am I stupid? If so, that's fine, just please help.

No, they've moved it just to keep you wondering if you've lost your marbles.

Menu app icon > Customise > Layout > select 'Vertical View'

Toad-Hall, thank you SO much. Incredibly helpful. The Mozilla/Thunderbird help FAQ's has instructions for a prior version and none of their instructions exist any longer. I just downloaded Thunderbird yesterday and setup has been fairly easy aside from this one piece.
