How do I make the toolbar always autohide just like it does in fullscreen mode?
I'm very particular about my screen estate. How can I make it so the navigation bar and tab bar always behave like they do in fullscreen mode, i.e. go away until I mouse over or press e.g. CTRL+L?

There is no built-in feature for that. Can you just use Full Screen view or is that undesirable for some other reasons?
Note that some notification and doorhanger drop-downs are connected to specific toolbar elements. If you would hide the Navigation Toolbar then these items can't be displayed. That is the main reason why you can no longer hide the Navigation Toolbar.
In Firefox 56 you can still use Legacy extensions like Classic Theme Restorer to hide toolbars via the right-click context menu, but legacy extensions will stop working in Firefox 57 and there is no autohide possible.
The situation is, I like to have my browser on one side of the screen for reading, and whatever I'm working on on the other side, so that's why fullscreen isn't what I'm looking for. But I found a userChrome.css tweak that seems to get me halfway there, only the tabbar stays visible.
When you get a working rule set you could share, or for input on solving remaining problems, you could try:
