Something is changing the address to a secure connection
First, when I hit the "Share Data" button it erased everything that I had typed here. Not cool.
Second, re-typing what I put in before. I had previously installed "HTTPS Everywhere". I tried disabling it and then uninstalled it. I have stopped and started Firefox each time. Some process keeps changing the address I enter to a secure connection.
How do I get that to stop?

It depends on the site. Some sites force HTTPS by sending Firefox a "Strict Transport Security" header. Firefox will record and apply this to all future requests unless the site set an expiration on it.
Are there particular sites where you need to use HTTP and not HTTPS?

To make the above more complete, other reasons you might have the address changed are:
(1) The site redirects, for example, the Google home page redirects from http to https
(2) Firefox's address bar autofill feature uses a previously saved secure address -- you usually can override this by using a more complete address rather than accepting a suggested address
