So I am a bit surprised to find that all the messages I have been "delete"ing are gone for good, and my trash folders are empty. I expected the default delete action to be to move to trash, then empty trash (ie permanently delete) according to some rule, like on exit or after 30 days etc. So I accidentally deleted a message that I need (its not a serious problem) which caused me to learn this. How do I set delete (the button when viewing a message, or when multiple messages are selected, hitting the delete key) to move to trash instead of immediately obliterating the content? I have searched through settings and through online help to no avail.

If I am misunderstanding, please enlighten me.

when deleting messages (del key) on a Pop account, by default on my Thunderbird (102.4.2) they are going to Trash folder. It has always be the case since a very long time, but I can't say about more recent versions. If you use Imap, well, things can get complicated and behaviour can depend on the server.

Im using this with gmail, so I guess its not a pop account. Learning all the time, sometimes burning fingers in the process....

Gmail can be accessed via pop, but yes it's not a very usual setup so it's probably imap. In the 'see also' section, there is this thread that could be of interest:
