
Is there a way I can control the line length in the body of the email?
I want it to wrap at around 40 or 50 characters so that recipients can read the emails more quickly.

Most email clients will wrap where the text meets the edge of the display window. You shouldn't need to do anything specific to make this happen.
Anyhow, I hate it when the sender of a message makes decisions about layout and readability on my behalf. That's my choice to make, not the sender's. You don't know what size of font I'm using nor how wide my screen is.
If you want to be really old fashioned, set it to compose in plain text and set a fixed line length (72 characters is an old standard for this, dating back to teletypes, CRTs and C:\ prompts).
Look under
Tools|Options|Advanced|General→Config Editor
and seek out settings using "wrap" and "flow".
