this sounds like the files in your profile folder that store the information about your extensions might have gone corrupt. navigate to your profile folder and delete the files extensions.ini, extensions.cache, extensions.rdf, extensions.sqlite & extensions.sqlite-journal (they will be regenerated the next time you launch firefox).
