You control how long mail is retained.

In Thunderbird: account settings > synchronization & storage.

I have mine set never to delete messages.

There are also folder-level settings in Thunderbird that override the account settings: right click on a folder > properties > retention policy

You may also have some settings at the server that you can access through webmail. My server has an auto-purge setting for the spam and trash folders.
