Firstly, it's not recommended that you disable Firefox updates, which is why that option was removed from Firefox some time ago. You leave yourself vulnerable to a number of well documented security and privacy flaws that have been fixed in newer versions of Firefox.

That said, you can disable Firefox updates. It's intended only for organization networks that are handling Firefox updates centrally. It only works for Firefox 60 and newer.

It can be done using the DisableAppUpdate policy provided in either Windows Group Policy or a policies.json file.
