Set Language to Australian English
I have noted (finally) that Firefox is setting not just Language but units and currency based on the Language.
So, of the choices available - UK English is the nearest in terms of Language and spelling. However it's not my currency and despite being "technically" metric are not.
US English uses a currency that is not mine (but pretends to be), spelling that is not mine and does not even use Imperial units but some Elizabethan hybrid.
Canada manages to take the language from one and the units of the other.
No other Language English XX are offered.
Can I have Australian English - New Zealand or Singapore would be fine.

Units and currency sounds like website content honestly. That's either set (and should be configurable) by the sites, or are a guesstimate, based on your preferred languages and approximated geography.
You're right that there's no en-AU or en-NZ separate language pack distribution, as it's probably not necessary — but that doesn't mean you can't signal your locale preference for other things. See "Set preferred website content languages" section in Choose display languages for multilingual web pages where you can definitely add Australian English as a top preference, and hope sites will infer the appropriate units and currency for you based on that.
