Due to Apple's restriction, every iOS browser uses the same engine under the hood. Every iOS browser is Safari with different frontend.

Yes the Firefox on iOS/iPadOS uses the WebKit layout engine instead of Gecko (that desktop and Android Firefox uses) due to Apple's platform requirement/restrictions. This is also why there are not Extensions for Firefox on iOS/iPadOS like there are for Android and desktop at addons.mozilla.org.
