Linux Firefox updates frequently, and whenever it does the preferred Search Engine is changed back to google. How do I prevent that happening? Even better, how do I remove google permanently from the list of possible search engines?

Are you updating by the package manager?

To remove that search engine go to Settings > Search > Search shortcuts, select the engine and click the Remove button. You can use the same section to change the order in which search engines are used. On the same page you can change Default search engine.
