From column displays both sender's name and e-mail address.

Previously, the "from" column when looking at my in-box only displayed the sender's name. Now it displays the e-mail address too. Makes it very busy and hard to read IMO.

Can I change a setting somewhere to display only the sender's name and NOT the sender's e-mail address?

Yes, it's in Settings under Reading & Display.
