Try: 

   Exit Thunderbird if running.
   click windows key and 'r' key
   Enter: thunderbird.exe -P --allow-downgrade
   click on 'OK'

That process is a bit problematic, but usually works. Be sure to go to settings>general and set to NOT automatically update or you will be updated again.
