You do not mention what OS you are using, but I have heard of this issue with MAC.

Maybe the system Keyboard preferences have auto check enabled and this is over riding the thunderbird option.

Suggest you disable the system auto check. The spell-checking service in OS X can be adjusted system-wide. Go to the Keyboard system preferences, and then click the 'Text' tab. In here, you will see the settings for text substitutions, next to which you will see a checkbox for 'Correct spelling automatically.' Unchecking this will disable auto-correct system-wide.

Then see if this corrects the Thunderbird option making it not grey.
