I'm very happy with the Thunderbird version I'm useing. How do I totally turn OFF updates, so I stop getting a gazillion pop-ups about an update I don't want?

Tools > Options > Advanced > Update tab

This is where the settings are regarding updates. There will be three options: 1. Auto check and install updates 2. Auto check but ask me if I want to install 3. Never check

It sounds like you have the second option selected, it is checking and asking you with a prompt. I also use this becaue I want to keep up to date with bug fixes and security issues, but I want it to update when I say and not when I'm in the middle of something important.

Updating Thunderbird will contain security updates, bug fixes etc. You need to be fully aware that selecting to not update may impact on your security risk.
