Is there a way to get off this self perpetuating cycle? A stable version that just works without all the "latest and greatest".

Well there is the current Firefox 140 ESR though it is meant more for Enterprise users in mind as they like longer term stability. It is based on the Firefox 140.0 Release but with allowed stability/security fixes since.

It is currently at Fx 140.7.0esr and will likely get updated til between 140.13.0esr or 140.15.0esr based on past ESR versions not counting the Fx 115 ESR.
