Hello and thanks-in-advance: it would be nice if we could re-order the email accounts listed in the left column, so for our particular workflow, we could process emails from accounts in an order we prioritize. Can this be done?

Go to "Account Settings". The list of accounts in the left pane can be drag-and-dropped into the order of your choice. This is a recent feature, so some older versions may not be able to do it.
