I want all my other settings to sync with all my computers/devices EXCEPT my Themes. I have un-selected my "Open Tabs" and "Add-Ons" in my Sync settings and they still keep switching back to my original theme that I had before changing my settings. How can I get this setting to stop syncing the Themes?

Try to set services.sync.prefs.sync.extensions.activeThemeID = false on the about:config page.
