I can't tell who my past emails are to by looking at 'sent' list - they all say my name instead of recipient in 'sent' list. (At the moment I have to click on very complex next stage selection of emails by name, which doesn't let me keep to a simple list of recipient.) How can I change this ?

Change it to show the addressee. At the top of the column where your name appears there is a label. It's actually a button, so right-click it and select the option for the recipient, and deselect the "from" column. An alternative is the "correspondents" column which should intelligently select either sender or recipient depending on context.

I don't keep messages in either Inbox or Sent folder. I create folders to file messages in, so a given folder will contain both incoming and outgoing messages and therefore both sides of the conversation. In this case neither "to" nor "from" on its own is useful - you'd need both to get the full picture and that's rather a waste of space. The "correspondents" column is ideal in this arrangement.
