How do I change the "authentication method" in Thunderbird for an e-mail account to oauth?

you go to the account settings and change it. But you must be using an approved server name and as you don't say I will guess it is Microsoft as they are the most recent playing the oauth game.

That would be Incoming IMAP/POP: outlook.office365.com Outgoing/SMTP: smtp.office365.com
