With the release of 128 the plug-ins that sync contacts from our Exchange server to Thunderbird no longer work.

For EXISTING accounts already set up how can I have these accounts sync the contacts with the exchange server?

You need v. 4.11 of TbSync and Provider for Exchange ActiveSync:
