Why do ios upgrades on my MacBook Air delete my firefox, open tabs, bookmarks and information
And when it does, how can I restore my open tabs and bookmarks from my synced information?

In a case like this, do not sync until you have restored the missing data. If you sync first, it could lose the stored data.
Look on your desktop. Do you see a folder
called; Old Firefox? Look inside.
Look for the folder with the latest creation date.

Type about:profiles<enter> in the address bar.
How many profiles are listed?
How many should be there?
Also, open the profile folder in your file explorer.
