The lock indicates an encrypted connection to the server. This is what you want.

Even though that would be a silly move, you can ask your email provider for the corresponding server settings for not using encryption. Why anyone would want to do this is beyond me.

Same reason there is a little lock in the URL bar of a secure website.
If your provider wants it you have to use it. They configure their servers.
