I was previously able to drag contacts from my address book the the "To" line in a new email, but now it attempts to enter each address I drag twice.

Several people have reported this, I believe there's a bug report on it. Meanwhile you can right-click on a recipient in the address pane list and choose 'add to the To: field'.
