Yesterday Thunderbird started to delete all emails in my account. Leaving only the most recent email in all of the folders including inbox. Please help me stop this, I have a lot of important documents which have been wiped out.

If your account is POP, check that the setting in Tools menu (ALt+T) > Account settings > disk space is not set to automatically delete messages based on age or total.
