Same way it has been done for about 10 years. Go to the stored passwords and edit the entry.

Just remember, Thunderbird only stores passwords. You can not change or reset an email account password in Thunderbird unless it has been also done with the mail provider, otherwise you will just get bad password error messages or failed to log in or the like.
