When I try to start Thunderbird I'm unable to login with my live.com credentials. The error says: "We can't sign you in..." Don't have cookies turned on. Any ideas?

have you checked in setting that you do in fact have cookies enabled in Thunderbird? Some security software is ever helpful in turning them off on your behalf.
