Trash folder only keeps deleted messages for one week. How can I change this date range to longer period? Where are the older 'deleted' messages?

If you have an IMAP mail account you are restricted by the retention policies of your mail provider. SO I suggest you ask them the question as Thunderbird will only show what is still on the server for IMAP mail accounts.
