thuderbird 78.1 is not using the previous profile
does this version of thunderbird require that I set the whole thing up from scratch? If so, you can stick it where the sun doesn't shine

Visit Help > troubleshooting > about:profiles. Is a "Default" profile listed? Which profile shows "This is the profile in use and it cannot be deleted."? And in which directory is the Thunderbird program installed?
Maybe "Visit" instruction is ambiguous as it could be mistaken for a website.
What Wayne meant is inside Thunderbird 78.1, open the main menu from ≡ button, then navigate: ≡ > Help > Troubleshooting > Application Basics > Profiles > about:profiles (click that link) On the troubleshooting page, you can also use Ctrl+F keyboard shortcut (on Windows) and search for about:profiles to locate that within the page. About Profiles page will open in a new TB tab and show all of your existing profiles and how they are (not) used. Then you continue with Wayne's questions.
