When I used to open Thunderbird, I would get the list of folders on the left. Now it goes directly to my inbox. I can't access Write Mail
Thunderbird is running on an Apple Desktop computer, 2 years old, with up to date software. Thunderbird software also up to date

Sounds like you are missing a couple of things.
The Folder Pane is where your accounts and their folders display. Click the AppMenu button (3 horizontal lines) In Windows you hover over Options and select Layout. Then click on Folder Pane. On your MAC it might be under Preferences or you will just have to look for Layout.
The Write button is on the Mail Toolbar. If you are missing that toolbar go to the View Menu and select Toolbars. Turn on any missing toolbars.
