My sdsu email is cancelling those who haven't been there for 10 years. How can I move that email info over to a new addr in Mozilla so I don't lose the history?
I have an IMAP email address from San Diego State University, a gmail account, and I see it on Thunderbird. They are cancelling all email addresses of retired employees who were not there for 20 years. I want to know if I can move that whole email including all of the folders over to a new account with a new email addr into Thunderbird?

You can copy the messages from the SDSU IMAP server to your Local Folders account. You may need to manually replicate the folder hierarchy on the server locally if such a hierarchy exists.
I don't know what you mean by Local Folders account? If I make a new gmail account, and I have to make the folders like on my IMAP account, do I just select all of the folder, or all of the emails in the folder and copy them into the folder I created on the new gmail acct?
I wouldn't want to copy into a live IMAP account; you'd be asking it to simultaneously download AND upload all that data.
Local Folders means it downloads only, which is quite stressful in itself.
Many users seem to be successful using drag-and-drop to copy folders. I have never been sure how it understands that you mean a copy, not a move, and if folders are deeply nested, you may be setting it up to move enormous quantities of data. I would build the folder system by hand, and move messages in small batches, using right-click|move to…
