As far as I know Thunderbird doesn't try to start when a user boots their computer, at least in macOS.

Thunderbird doesn't have any preference for it, nor on the preferences dialog box neither in the hidden about:config.

It could also be that you shut down your computer before Thunderbird is completely closed and have previously asked macOS to open all the apps that were running before shutdown.
