This is really two possible questions, and the way you phased it is vague with respect to these two questions 1. You want your email to NOT be stored on the provider and ONLY on your computer? 2. You want your mail stored on your computer and you don't care what happens at the provider?

If #2 is yes then you should use imap, especially if you want to also access your mail from a phone.

If #1 is yes (plus you don't want to access using a phone), then you might chose pop.
