How to organise old messages by moving to mailboxes?

I have successfully migrated all my mailboxes from Eudora, and now I want to move new incoming and outgoing messages in Thunderbird to an appropriate mailbox, but I can't find any menu item that enables this.

Also, if you view a message in the Inbox and look at the header pane, the sender will appear with a star next to his address. You can click that star and one of the options that appears is to build a filter based on the sender's name.

And BTW, if the star is yellow then that address is in your address book. If the star is white then it means it was not found in your address book. Again, clicking on the star will let you add the contact or let you edit it, as appropriate.
