on my old Outlook email I was able to set up the letter page with my name and my business information at the end of the message. I can not find anything like this on Thunderbird. All incoming mail I get has it so why can't I find it here?

It's called your signature. You can set one up for each account under Account Settings.

If you need to change between signatures then look for the Signature Switch add-on. This will require you to create signatures as HTML or plain text files.
