Even though Firefox tells me I'm up to date, when I try to play a video in Netflix or Amazon Prime, I get a prompt saying it can't show the program because my browser isn't the latest one, but it is.

It is the latest Firefox you can run on macOS 10.14 as Firefox 116.0 to current Release requires macOS 10.15 or later to run. https://support.mozilla.org/en-US/kb/firefox-users-macos-1012-1013-1014-moving-to-extended-support
