Our not for profit organisation requires an email address that various members can access and I wish to know can this be done with Thunderbird
It is really quite simple. For example the treasurer, secretary and chairperson need to access the organisation's email address from their personal computers for the information it receives such as letters from associated organisations and accounts for services. I looked at doing this with gmail but it was just too hard. I want to know i it can be done with Thunderbird?

You are comparing two different things really when you compare Thunderbird to gmail. GMail is essentially a mail provider with a web mail client for viewing mail. Thunderbird is a dedicated email client for the reception and management of email.
So can what you want done be done with Thunderbird. Of course it can. You just add the mail account in Thunderbird default IMAP protocol and everyone connecting to the same email account will see exactly the same thing. The only limitation may be that some mail providers get a bit funny if the same account is accessed from multiple IP addresses at the same time. But for that you will just have to suck it and see.

Just make sure you read up on how IMAP protocol works. It is sever based and you view messages remotely from your computers. If a message is deleted from ANY computer or at the server it is gone from all. Not a bad thing but this surprises most users.
