how do I reset email composition screen back to pre version 31., lack of feedback icon
Updated to thunderbird version 31.0. how do I change my email composition screen back to the way it looked in the previous version?
In the new menu icon I do not have a help or submit feedback option.

I have never seen a Provide Feedback button in any version of Thunderbird that I have ever used. Maybe you had an add on that gave you that button.
The Help button is on the Menu Bar just like all previous versions.
If your menu bar is not showing, press the alt key to make it appear. The alt key or F10 reveals hidden toolbars in most applications.
If you want the menu bar to appear all the time press alt to make it show. Then select View-Toolbars and click it back on. You will have to do this in each window where the toolbar is missing.

That was a design decision that the theme developers made, assuming that you are talking about the addressing area which has now just lines rather than "real" boxes until you click into them to add an address.
Have a look at this post for some custom style code mostly reverting it, and this article for instructions where to add it.
If you don't want to change the userChrome, consider a theme such as this one:

I had the same problem with the email composition window (ie a new mail) with dark blue across all boxes, why that was done I don't know as all the other TB windows appear to be the same, so am trying australis addon, not sure I like it but at least the new mail/composition window looks better, it was that or revert to an earlier TB version which I am loath to do (but why did they change the colours?)
