I am trying to downgrade to ver.68.10.0 but after installing ff is updating automatically. I've tried the following advice, but it is still updating. Any ideas?

"Important: By default, Firefox is set for automatic updates. To prevent Firefox from automatically updating itself after you install an older version, you'll need to change your Firefox update settings: Click the menu button Fx57Menu and select Options. In the General panel, go to the Firefox Updates section."

Hi

What reasons do you have to downgrade from 78 ESR to Firefox 68.10.0 ESR ?

Note that not all websites support that Firefox version properly.

a certain website works only with this version

You can install a portable (ESR) Firefox version to access websites that do not work with the current Firefox release. The portable version comes with its own profile folder and doesn't interfere with currently installed Firefox versions.
