Hey, Chris! To install updates for the iOS app do the following:

Open the Appstore -> Tap on your avatar in the top right corner -> Scroll to the Firefox app and tap "Update".

If the button next to the Firefox icon says "Open" instead of "Update" then you are already up to date!
