I use Windows, Ubuntu, Debian and Android overall for 30 years and this has never happened to me, So this is not so much and update issue but a user/OS one.

All my devices update regularly.

No, my bookmarks are not affected. My login info is also still on my Firefox. It's just the cookies that delete themselves for some reason. I have sync turned on too, I don't know why this happens.

What do use the sync to sync with. Could it be that something you sync to deletes login data when you close the Fx

No I don't. All I use is uBlock Origin

I only use the built in Mozilla sync, so that Fire Fox on my phone has the same data as my PC.
