If the data is available, it's on the extension's details page, which is accessed using the More link. It's in a section below the main description, where you set whether to auto-update the extension.

It seems this date is not the date I personally updated the extension, but the date the update date of the version of the extension I have installed. I'm not sure how accurate that is. I updated one today but it still shows March 7th. ??

You can check the extensions.json file in the profile folder for such detail. If you open the file in a Firefox tab then you can use the builtin JSON viewer.
