When I select print thunderbird defaults to Microsoft print to pdf instead of my HP default printer. I set the HP printer in the print dialog box but it goes back to Microsoft print to pdf when Thunderbird starts again.

Open Tools/Options/Advanced/General/Config. editor, right-click the pref. print_printer, Reset, OK to close Options, restart TB, and see if the default printer persists in the print dialog.
