The New UI is awful and I want options to roll back
Half of the address bar is utilized by irrelevant information. The search bar is so small that I can't see what I've written. Many of the buttons and icons are in the wrong place. I want the old UI back and I cannot find a single extension or add-on that is compatible with "my" version of firefox.
Are their any alternatives or do I simply have to suffer the stupidity currently inflicted upon me? Cos if so I'm going to use chrome. It irritates me too but at least it's efficient with it's memory demands.

See this to learn how to modify the Firefox 57 User Interface more to your liking. https://www.howtogeek.com/333110/how-to-customize-firefox-quantum-and-remove-the-white-space-around-the-title-bar/
Note : "I'm about to install chrome and be done with it. " Please do. Mozilla believes in choice but if you would like to see how to change things then stick around, the best is yet to come.
Sorry, but Tools --> Options have been the answer in every version of Firefox to allow you to control things. It is the COntrol Panel.
The Search Bar can be turned off, as the Address Bar can be used as Search.
Please Copy/Paste about:preferences in to the Address Bar then Enter, Click Search Turn off Search Suggestions in the Address Bar unless going to now use the Address Bar to Search from. If have Questions please ask.
Please read : https://www.howtogeek.com/332449/whats-new-in-firefox-quantum/ and https://www.howtogeek.com/333230/why-firefox-had-to-kill-your-favorite-extension/ As to how it looks well that is now a option called Customize and you can do a lot. https://www.howtogeek.com/333110/how-to-customize-firefox-quantum-and-remove-the-white-space-around-the-title-bar/
Customize : Here's a more comprehensive project which affects not only tabs but brings back the old "grid-style" options menu. https://github.com/axydavid/FirefoxUI/blob/master/README.md
It isn't completely possible to use the Australis design with Firefox 57, but depending on what you want, you might be able to customize the UI to look more like the old one: This project: https://github.com/wilfredwee/photon-australis lets you have the old tab bar appearance back in Firefox 57. You can remove the space around the address bar by right-clicking on the spaces, and choosing "remove from toolbar". Note the Black Theme is just a Example and can be found in Customize.
Memory Issues : Could you go to the Firefox Menu Bar then--> Help --> Troubleshooting Information Please take a look in the Accessibility Section if Accessibility is set to "True" there. If is "True" see if the following fixes the performance problem: Go to the Firefox 3 Bar Menu --> Options --> Privacy & Security then under Permissions check the setting to prevent Accessibility Services from accessing your browser.
If it does not fix the issue copy the contents of that page Troubleshooting Information and paste here into a reply on the forum.
So if you have further questions about anything from that duplicate post please ask,
Please let us know if this solved your issue or if need further assistance.

Hi whitelion1284, in addition to using Customize for the buttons outside the address bar, you can reduce the space consumed by items inside the address bar. In particular, at the right end, right-click > Remove from Address Bar should work for the Pocket icon and the bookmark star.
Other changes can be made using custom style rules, but before making recommendations, do you want to post a screenshot of how much progress you've made using the built-in features?
I posted a suggested style recipe in another thread to compress the other content on the bar to make more room in the address bar: https://support.mozilla.org/questions/1189009#answer-1037543
