the email format has changed and I want it back the way it was
My email screen showed incoming mail which I could single click on and that would open the post at the bottom of the page and STILL show all my emails. That has changed - all by itself. Now I must double click on a post, that removes me from the in box and shows the post full screen. That changes everything I do with emails such as reply, send, etc.

You haven't said anything about Thunderbird looks. Has the lower pane where you used to see messages vanished too?
The entire screen that I had no longer exists. I could see my incoming mail, single click on a post, read that post below the other emails. Now - totally new screen. I must double click on a post and then it becomes the whole screen. The reply, send, etc are all different. A panel at the top of the screen makes no sense whatsoever. I want the original format returned.

I am guessing that your message pane at the bottom has been closed or minimized. Try tapping F8 to restore it.
Nothing you describe is new as far as I can tell. Just a different display mode which has always been there.
Try enabling your menus and start finding your way around the settings available to you. Press <alt> to expose the menu, select View|Toolbars and tick the checkboxes.
When you have a menu, look at View|Layout.
