When I open a new email, the signature is placed automatically. How can I customize that, so I can decide for myself if I want the signature to be placed or not.

The Signature Switch add-on lets you choose between multiple signatures, But the extra clicks needed to choose and replace a signature might well be more work than just editing the existing signature.
