I only have a few choices (ie 'yesterday', 'today') available to browse in my history. How can I add more choices...like to be able to go through a few weeks

Make sure that you keep the history for long enough.

The pref browser.history_expire_days (default 180 days) determines what is stored in places.sqlite on disk and overrides the setting in Options > Privacy.

To open the about:config page, type about:config in the location (address) bar and press the "Enter" key, just like you type the url of a website to open a website.
If you see a warning then you can confirm that you want to access that page.
You can use the Filter bar at to top of the about:config page to locate a pref more easily.
