I am using Thunderbird version 128.5esr. I'm trying to add a gmail account per the instructions here: https://support.mozilla.org/en-US/kb/thunderbird-and-gmail

My instance of Thunderbird does not have an option for: File > New > Existing Mail Account…

Please advise.

Yes it does. If you click File>new>email account you will see you are in the right place. Sometimes, it pays to experiment a bit with instructions because minor tweaks happen in new releases and all web pages do not get updated immediately.
